Oriental Salad- This is one of my favorite recipes!!!
There are 3 separate steps to the recipe that are combined just before serving.
Step 1:
- 1 large napa cabbage
- 1 medium bunch spring onions (optional)
Wash cabbage and onions thoroughly. Cut cabbage horizontally in thin strips. It will curl up when cut. Cut all the way to the core at the other end. Then chop somewhat for bite-size pieces. Use as much of the white & green part of onion as is clean. Chop in small pieces. Mix cabbage and onion together. Cover and refrigerate.
Step 2: (I usually use 2 pkgs of noodles, with one large head of Napa cabbage)
- 1 pkg. slivered almonds (pine nuts can be substituted)
- 1 pkg. Ramen noodles – Oriental flavor
Roast almonds until lightly brown at 500 degrees. Break up Ramen noodles in small pieces while still in package. Saute until lightly brown and add packet of seasonings. Mix almonds and noodles together.
Step 3: Dressing (if you double the noodles double the vinegar and soy too)
- 4 tablespoons of red wine vinegar
- 2 tablespoons of lite soy sauce
- ½ cup olive oil
Wisk together dressing ingredients.
Right before serving, toss all 3 components of the salad together.

Strawberry Salad - Yummy
Lettuce pieces (red or green leaf)
small bag of sliced almonds
strawberries cut into pieces
Poppyseed Dressing:
1/3 cup sugar
2 Tblsp vinegar (apple cider or white)
1/2 tsp salt
1/2 cup vegetable oil
1 Tblsp poppyseeds
1 Tblsp lemon juice
1/2 tsp dry mustard
Combine all dressing ingredients and shake in container to blend.Toast almonds in 2 tsp sugar. Toss lettuce, berries, almonds, dressing. (Substitute mandarin oranges and red onion slices when strawberries are not in season)
