I scored some super inexpensive pork chops yesterday on the Quick Sale at Lowes Foods. I have divided the pork chops, created the marinade and will freeze them. Here are the three different marinades I used...
Lemon Pepper
2 center-cut pork chops (really, any cut will probably do, just adjust cooking time)
1 good-sized shallot
4 sprigs of fresh thyme, stripped
2 cloves garlic
2-3 Tbsp. olive oil
lots of fresh ground black pepper
1/2 tsp. or less salt or seasoned salt (be careful if your lemon pepper includes salt)
2 tsp. lemon pepper
splash of soy sauce
1. Mince the garlic and shallot.
2. Combine with all remaining ingredients in a large zipper bag (Ziploc), rub all over the pork chops, and marinate at least 30 min.
3. Bring meat back to (cool) room temperature before grilling on a pre-heated grill, 8 min. total, or until done.
Note: if you don’t have a grill, you could broil these quickly in the oven, or pat dry and sear in a pan.
American Marinate (I named this one myself)
1 tablespoon soy sauce
2 tablespoons vegetable oil
1 tablespoon Worcestershire sauce
1 teaspoon lemon juice
2 tablespoons brown sugar
2 tablespoons ketchup 6 pork chops, trimmed
Honey Garlic Marinade
1/4 c. lemon juice
1/4 c. honey
2 tbsp. soy sauce
2 cloves minced garlic
Center cut pork chops, enough for 4-6
Combine above ingredients and pour over chops in a plastic bag. Refrigerate 6 to 24 hours. Grill chops about 15 minutes, turning once, basting with marinade often.
