Monday Menu Plan Dec 6th

Monday - Meatballs (heavenly, I made Friday, pic above w/ cell phone not so pretty), Mashed Potatoes,  Spring Mixed Salad (I will be at a catered Christmas Party, hate I am missing this one, looking forward to it for lunch one day though!!)

Tuesday - Eggplant Parmesan (new to me recipe), steamed veggies, homemade bread

Wednesday - Ham and Cheese Melts (on bread from Tuesday), baked potato wedges, broccoli, Orange slices

Thursday - Leftover Buffet

Friday -  Pizza Quesadillas  (I will be at another Christmas Party, hope they enjoy this one (new to us recipe)!), Spring Mix Salad, Fresh Fruit

 

Saturday - Memphis Style Ribs, Red Potatoes (recipe to follow just received it in my inbox this AM), creamed corn (again MIL's garden batch)   Saving for next week.  still deciding, just depends on the weather at this point, thinking a soup!!!

Sunday - Simple Sunday Dinner

Breakfast:  oatmeal, homemade granola bars (they're alright, looking for a new recipe to try if you have one PLEASE send it!!!, cereal, pumpkin bread

Lunch:  Usually consist of dinner leftovers, Thursday dinner will most likely be the leftover Eggplant so Davis and I will try to eat the others, or sandwiches if we have to be out and about during the day like on Tuesday.

Produce: 
oranges -quick sale $1.50 for 5 lbs @HT
blackberries - BOGO at HT
raspberries - $2 at LF
gr bell peppers - quick sale 2 for $0.89/2
blueberries - BOGO at HT
3 pears - quick sale $1
eggplant - quick sale 2 large ones for $1/2 @ HT
bananas - no sale just had a begging 2 year old
organic spring mix 16 oz @ HT - so LOTS of salad for this week
3 lbs red potatoes  - quick sale $1.50 @ HT
5lbs potatoes - quick sale $1 @ HT

I know that is A LOT of fruit for this week but I am confident we will eat it all (by Friday, especially the berries).  I felt like I found some pretty good deals!!
Other stuff going on in my kitchen this week:  Black Bean Burgers (making to freeze), chocolate chip freezer cookies (recipe to follow), pumpkin bread (recipes to follow) 

Can I just let you know my DH and I had a deep FREEZER scare last week.  Thursday night I went to the deep freeze to grab a bag of cheese and yep, it was a little 'soft' to be frozen.  Long story short, the breaker had tripped from LAST THURSDAY (Thanksgiving) when I vacuumed out my van.  At least that is what we think...but the great news is:  everything was still frozen (meat wise) and the other things were just beginning to thaw a tad bit (thankful for this cold weather)!!!
