Tasty Tuesday: Shrimp and Grits

This recipes does NOT use half and half...a 'healthy' version, if that really exists with shrimp-n-grits...

What you will need:
2 1/2 cups chicken broth
3/4 cup of quick grits
3 tablespoons cream cheese

1 tablespoon butter
lime juice (unknown amount, maybe 1 tbsp, add according to taste desires)
3-4 cup shrimp (thawed, de-veined, peeled)
cayenne pepper (optional)

When the water is boiling add grits. Cover, simmer 5 minutes stirring occasionally. Mix cream cheese into grits cover, simmer until almost all liquid is gone and grits are tender, stirring frequently...about 7 minutes.



Melt butter in large skillet over med-high heat, add shrimp and saute approximately 3 minutes. Stir in lime juice. Remove from heat then spoon grits on plate and top with shrimp and drizzle lime-butter from skillet.
