Tasty Tuesday: Basil Jack Meatloaf

Basil Jack Meatloaf

1 pound of meat (if using deer add extra egg)
1 cup of ketchup, divided (recipe makes 1/2 cup)
1 cup breadcrumbs
1/2 red onion, chopped
2/3 cup fresh basil chopped (or dried basil approximately 2 tbsp)
1 cup Monterrey Jack Cheese, shredded (optional)
2 large eggs
1 tsp mined garlic
olive oil cooking spray

preheat oven to 400 degrees
Combine meat, half of ketchup, breadcrumbs, onion, basil, cheese, eggs and garlic. Mix well. Coat loaf pan(s) with spray and place mixture into pans.
Spread the rest of the ketchup over top of loaf(ves) (I omit this). Cook 45 minutes or until cooked. Let stand 10 minutes before slicing.
