Monday Menu Plan Dec 13th

Monday - Spaghetti with Meatballs (homemade, hopefully the recipe will be in my inbox soon), Salad, Homemade Bread, Fruit

Tuesday -  Breakfast!!  Eggs, Biscuits (1933 recipe), Turkey Bacon, Gravy, Oatmeal/Cream of Wheat?, Fruit

Wednesday - Cheeseburger Soup, Bread, Fruit

Thursday - Memphis Ribs (recipe below), Red Potatoes dish (recipe below), Creamed Corned, Fruit

Friday - Left overs

Saturday - possible Christmas dinner....

Sunday - Something Simple

Cheeseburger Soup

4 c chicken broth
1 T dried onion
1lb gr beef or turkey, browned and drained
1 bell pepper, diced
2 potatoes, cut in chunks
2 garlic cloves, minced
1 c milk
24 oz velveeta
Add all ingredients except milk and cheese in crockpot and cook. Alternatively, put all in a soup pot and bring to a boil. Simmer for 1 hour. Add milk and cheese the last 20 minutes.  Great with sourdough bread.

Memphis Rub
1/4 c paprika
1 tbsp firmly packed dark brown sugar
1 tbsp granulated sugar
2 tsp salt
1 tsp freshly ground black pepper
1-3 tsp cayenne pepper
1 tsp dry mustard
1 tsp garlic powder
1 tsp onion powder
Combine all ingredients in a jar, add lid shake to mix.  Store away from heat and light for up to 6 months.  Makes about 1/2 cup; enough for the 4 to 6 racks of ribs. 

Memphis Mops Sauce
Vinegar, yellow (ballpark mustard),  salt....mix to taste (not sure of amounts, sorry)

Red Potatoes:
red potatoes, cut into small pieces, then boiled

~1/2 c. red onions, sliced thin
seasoned salt/pepper
1 box stove top stuffing, prepared
1 block 2% velveeta, cubed
1/2 stick butter/margarine, cubed
season the potatoes then spread into greased glass baking dish. sprinkle red onions over. arrange 1/2 of the cheese over the onions and potatoes. then layer the stuffing, rest of the cheese, then butter on top.
cover with foil and bake at 375 for about 30 mins.

I will (most likely) substitute the velveeta cheese for regular cheese...hope it still tastes the same!
