Menu Plan: March 18 - 24

Welcome Dagen Kylee!  How precious is that baby girl?  I, happily, snuggled with her this past weekend...hence the late post.  While I was away I tried to remember what we needed to eat produce wise from last week (to create my menu).  Also, I did the standard Aldi run yesterday afternoon.  This week we will celebrate Davis' 4th birthday, well, just Thursday...so I will be a "cook to order" chef on her special day.  I did predict pancakes for breakfast but I'm not sure what she will choose for the other two meals.

Menu Plan: March 11 - 17

  My week in the kitchen didn't start off on the right foot last week.  Monday and Tuesday's dinner were awful, like throw away-start over (Monday) or rinse off the pasta (Tuesday) bad.  So when Wednesday's Vegan Quiche (lunch) appeared on my menu I knew I couldn't afford another flop.  I did make one and boy am I glad I did.  It was EXCELLENT!  Darrell even took it for lunch on Friday and loved it.  (NOT kidding, I knew he'd hate it, glad I was wrong!)   SOOOO happy the week turned around with a hit!  So the Vegan Quiche is reappearing this week as dinner.  Saturday morning I whipped up a double batch of whole wheat waffles one for breakfast that morning and the other for the freezer.  I also made honey whole wheat bagels, pictured above for Monday (and the rest for the freezer).

I am looking forward to meeting my newest niece...HOPEFULLY she will arrive this week so we can return to the mountains for a quick visit and meet her.  (her due date has come and gone)

Menu Plan for March 4 - March 10


After the explosion last week, I am happy to report this week as "accident free".  We had the usual trip to Aldi today.  Everything above for $17...PLUS a small order from Whole Foods (5 lb organic carrots, kale, vegan cream cheese & butter, coconut milk, maybe 1 or 2 more things I forgot)...spent around $17 there too.  Speaking of, I canNOT wait for Whole Foods to open here!!! 

I'm not sure why I have all these soups going on this week.  Maybe it's because I'm a little chilly now and the sound of a soup/stew is warming.  The soup recipes are new to me so I just hope they are yummy!!  How about you...anything new you are trying this week?

Menu Plan for the week (Feb 26 - March 3)

I had started to clean the mess at the arrow but thought a picture to capture the moment would be nice.
No, that isn't ice or the next in style kitchen decor.  That, my friends, is what use to be my 9x13 baking dish.   Apparently when you turn on a cooking unit and it heats a baking dish that is sitting on the 'eye' this is what happens.  Now, for clarification, I didn't mean to.  I thought I turned on the rear unit not the front.  On the front sat my dish patiently waiting for me.  On the other front unit was this...

Our dinner.  Just sitting there all sauteed up waiting for the liquid to cover it.  Then after the BIG explosion, I happened to see the lovely GLASS chunk.  Great, a whole pot of black bean veggie stew wasted, well the veggies anyway (and my time cutting and slicing everything).  I am pretty sure those are tiny peices of glass on my spatula.  Oh should I mention the fact that I was standing in front of the oven when this happened.  My dish actually hit my hip.  I walked away injury free, thankfully.  Also, a blessing to be mentioned is that I was making this Saturday and my children were not in the kitchen like they usually are. Glass was EVERYWHERE...from the laundry room, back door to our breakfast nook as well as all over the counter.  YUP my fun story from last week so now for our menu...

Monday Menu: Update

I wanted to let you know that Friday morning our family welcomed a new baby boy.  With this new addition we are blessed abundantly will meals provided from our church family.  This being said I will resume our Monday Menu schedule January 31st. 

Not to worry, I will continue to blog as time allows...and since I have a trusty, deal-seeking and loving partner in crime, blog post will continue!

Monday Menu Plan Dec 13th

Monday - Spaghetti with Meatballs (homemade, hopefully the recipe will be in my inbox soon), Salad, Homemade Bread, Fruit

Tuesday -  Breakfast!!  Eggs, Biscuits (1933 recipe), Turkey Bacon, Gravy, Oatmeal/Cream of Wheat?, Fruit

Wednesday - Cheeseburger Soup, Bread, Fruit

Thursday - Memphis Ribs (recipe below), Red Potatoes dish (recipe below), Creamed Corned, Fruit

Friday - Left overs

Saturday - possible Christmas dinner....

Sunday - Something Simple

Cheeseburger Soup

4 c chicken broth
1 T dried onion
1lb gr beef or turkey, browned and drained
1 bell pepper, diced
2 potatoes, cut in chunks
2 garlic cloves, minced
1 c milk
24 oz velveeta
Add all ingredients except milk and cheese in crockpot and cook. Alternatively, put all in a soup pot and bring to a boil. Simmer for 1 hour. Add milk and cheese the last 20 minutes.  Great with sourdough bread.

Memphis Rub
1/4 c paprika
1 tbsp firmly packed dark brown sugar
1 tbsp granulated sugar
2 tsp salt
1 tsp freshly ground black pepper
1-3 tsp cayenne pepper
1 tsp dry mustard
1 tsp garlic powder
1 tsp onion powder
Combine all ingredients in a jar, add lid shake to mix.  Store away from heat and light for up to 6 months.  Makes about 1/2 cup; enough for the 4 to 6 racks of ribs. 

Memphis Mops Sauce
Vinegar, yellow (ballpark mustard),  salt....mix to taste (not sure of amounts, sorry)

Red Potatoes:
red potatoes, cut into small pieces, then boiled

~1/2 c. red onions, sliced thin
seasoned salt/pepper
1 box stove top stuffing, prepared
1 block 2% velveeta, cubed
1/2 stick butter/margarine, cubed
season the potatoes then spread into greased glass baking dish. sprinkle red onions over. arrange 1/2 of the cheese over the onions and potatoes. then layer the stuffing, rest of the cheese, then butter on top.
cover with foil and bake at 375 for about 30 mins.

I will (most likely) substitute the velveeta cheese for regular cheese...hope it still tastes the same!

Menu Plan Monday: November 8th

Monday:  Make your own pizza served salad and apple slices

Tuesday:  Black beans burgers served with pickles, homemade potato wedges, avocado

Wednesday:  Pork chops served with brown rice, broccoli, orange slices

Thursday:  Broccoli cheddar soup served with homemade bread and apple slices

Friday:  Meatloaf served with mashed potatoes, steamed broccoli and bread (and a yummy dessert!!)
Saturday:  Tailgating!  WHOAA!!

Sunday:  Leftover Buffet!!

Now that the pizza dough is making I had time to get this down, sorry I'm late posting!

Monday Menu Plan: May 10th

Monday -  Grilled Caribbean Jerk Chicken, Spring Mix Salad, Potato Salad 

Tuesday -   Parmesan Pan-Fried Pork Cutlets (deal here) served with Corn, Avocado and Tomato Salad  (we ended up eating at a friends house and not eating this...) probably carrots too

Wednesday -  Quiche: Spinach Bacon and Cheese (recipe to be posted tomorrow for Tasty Tuesday!!),  Grits, Hashbrowns

Thursday -  Homemade Pizza, steamed broccoli

Friday -  Leftovers

Saturday - Pizza Party!

This week I am also going to try my hand at making ketchup and barbeque sauce. I need the ketchup in order to make the barbeque sauce needed for Wendesday. I have a pretty full week so hopefully I will be able to get some recipes and pictures posted. I feel a little under the gun finishing up a dress for my daughter. She will turn 2 on Monday however we have her photo session already scheduled with Candi Friday evening! Yikes! Still lots to do and soooo little time!

Yipee, I am so excited I was able to get this posted MONDAY and not later! If you think we have salad often you are right! I have been purchasing the Organic Spring Mix by the POUND lately. It's less expensive that way and good for you so why not?! The only thing with 2 adults and one little one it takes a while to get through that much salad. I will say we have not let any go to waste!!
